Winter Schedule & Advance Orders

Our last weekend stand of the season will be Saturday, December 13. Weekend pastry box pickups will resume in March.

In the meantime, we are still accepting advance orders for holiday treats and whole-item batches through our website. Orders require 48 hours notice, and pickup times can be scheduled to suit your convenience.

The Iron Rail Bakery is Saturday only pop-up micro-bakery open one day a week, offering handmade pastries available for preorder. Each week features small-batch creations made with carefully selected ingredients, and the menu evolves with the season and our latest recipe inspirations.

Q&A

Where do I pick up my order?

Pick up your order at our little pastry cabinet at 5281 Hwy 72 E in Carlton Ga. We are open on Saturday from 8 am to 11 am.

Can I walk up and buy something?

Yes, sometimes we have extras, but I typically bake what is ordered.

Why only Saturdays?

Operating the bakery just one day a week lets us prioritize quality, try out new recipes, and maintain the joy of baking.

Ordering & Pickup

How do I order?

  • Online ordering is open from Sunday at 11:00 AM - Wednesday at 12:00 PM.
  • Orders can be placed through the link in our Facebook stories or right here at the website.
  • We begin prepping orders on Wednesday, so we need to have everything in by Wednesday afternoon.

Menu & Pricing

Expect a mix of European and American classic pastries with both traditional and seasonal flavors.

Do you offer gluten-free, dairy-free, or vegan options?

These pastries are not vegan, dairy-free, nut-free, or gluten-free. They are made in a small cottage kitchen with common allergens, so please be aware if you have dietary restrictions.

What kind of ingredients do you use?

We use fresh ingredients and source local and organic whenever possible. Everything is made from scratch in our cottage home bakery — from the doughs to the jams and fillings. We use real vanilla beans and vanilla bean paste, and our chocolate is always Guittard: either 62% cacao, Coucher du Soleil 72% Dark Couverture Chocolate, or Cocoa Rouge 22/24% Dutched Cocoa Powder. It makes a huge difference. We’re sticklers for quality.

How do I pay?

All orders are prepaid when placed here on the website.

Can I pay at pickup?

All orders must be placed and paid for in advance here at the website! If we do have any extras, you may pay for those specific items at pick up. We do also accept Venmo and Cash app.

Leslie Lorraine is the hands and heart behind The Iron Rail Bakery, a cottage micro bakery tucked beside the tracks in the charming town of Carlton, Georgia. She creates pastries that are as beautiful as they are delicious, each one a small work of art that delights the senses.

Long before she worked with flour and butter, Leslie explored the art of miniature pastries, sculpting tiny, realistic desserts in clay and transforming them into scented jewelry. Each piece was playful, refined, and utterly delightful, a way to carry the joy of dessert with you. Those creations appeared in magazines around the world, a testament to her lifelong fascination with detail, beauty, and craft.

Alongside her miniature pastry work, Leslie has dabbled in perfume, design, illustration, and jewelry, pursuing each with the same curiosity and precision. Creativity has always guided her toward pursuits that are tactile, intimate, and timeless.

The Iron Rail Bakery is a natural continuation of that journey. Each pastry is crafted with care, using fresh, high-quality ingredients. Leslie draws inspiration from minimal, rustic classics as well as the refined techniques of French patisserie. Cleanliness, precision, and thoughtful presentation are central to everything she does.

When she is not baking, Leslie explores ceramics, drawing, miniature pastries, and fragrance, always in pursuit of creating something that delights and lingers in the memory.
