The Iron Rail Bakery is a cottage bakery in Carlton, Georgia, just outside Athens, dedicated exclusively to refined French macarons.

Each batch is made with precision and care, paying close attention to texture, structure, and flavor balance. From smooth, delicate shells to thoughtfully paired fillings, every detail is intentional.

Where/when do I pick up my order?

Just a hop, skip and jump from Athens.

When you place your order, we will typically have your order ready within 48 hours. We will contact you to schedule a date and time for you to come pick up your order.

Expect a mix of seasonal confections with European and American inspiration, as well as whimsical macaron flavors like Strawberry Cereal Milk, and cake-filled flavors like Happy Birthday.

Do you offer gluten-free, dairy-free, or vegan options?

Our confections are not vegan, dairy-free, nut-free, or gluten-free. They are made in a small cottage kitchen with common allergens, so please be aware if you have dietary restrictions.

What kind of ingredients do you use?

We use fresh ingredients and source local whenever possible.
We use real vanilla beans and vanilla bean paste, real European (83% butterfat) butter and our chocolate is a variety of Guittard: Extra dark or semi sweet chocolate, Cocoa Rouge 22/24% Dutched Cocoa Powder as well as Callebaut Velvet white chocolate and Valrhona 33% White Couverture Chocolate used in several of our macaron ganaches.

Why are some of your macarons slightly browned around the edges?

Traditional macarons are often baked gently to preserve pastel colors. We intentionally bake at a higher temperature for texture.

Because our batters are rich in sugar, a subtle caramelization can occur in the oven. That faint toast is not a flaw. It is flavor. Especially in earthy, nut forward varieties, it adds depth and warmth.

Every batch rests for 24 to 48 hours in a controlled maturation process. We prefer a slightly sturdier shell, allowing it to slowly absorb moisture from the ganache and other fillings as it chills.

The result is not fragile and never soggy.

It is structured on the outside, impossibly tender within, and designed to melt in your mouth exactly when it should.
